I am constantly on the search for new recipes for delicious AND healthy food! Do you love jalapeno poppers? Wish you could eat them every day? Enter Jalapeno Popper CAULIFLOWER! I know, I know, everything you love is being replaced with cauliflower. Welcome to your thirties! But this is delicious and definitely satisfies your urge for this bar food classic!
As I enter the second month of my 2B Mindset journey to weightloss, I’ve become a bit of a veggie master. Now, I grew up in the Midwest. I love meat and potatoes and I’m pretty positive I didn’t eat a real vegetable until I went to college. So transitioning into a diet plan that weighs heavily on vegetables has proven to be a challenge some days. But it has also gifted me with some amazing recipes and ideas.
Jalapeno Popper Cauliflower is a creation of my own mind. I love cauliflower because it almost makes you forget how much you love carbs. Not quite. But almost. This dish is so easy to make! Dump it all together and bake it for 30 ish minutes depending on how you like your cauliflower and BOOM side dish that’ll have your friends and family talking!
The original creation of this dish started with me planning to make “Loaded Cauliflower Bake” and when I opened the refrigerator I saw some fresh jalapenos and the idea just clicked!
So here’s what you’ll need:
1 head of cauliflower
1-2 cups sour cream (depending on how “healthy” you want the dish to be)
1-2 cups of shredded colby jack cheese (add more or less for your calorie desires)
⅓ cup bacon bits (real bacon of course works just as well!)
1-2 fresh jalapenos chopped (pickled work ok, but fresh is better! Want more heat? Add more peppers and some of the seeds!)
Salt and Pepper to taste
Preheat the oven to 375 degrees
Chop the cauliflower to small - medium florets
Mix all ingredients in a bowl, save some cheese for the top
Spray a glass casserole dish with cooking spray
Pour the mixture in the casserole dish
Sprinkle cheese over the top of the casserole, for an added crunch add panko and butter for the topping
Bake for 25-30 minutes until bubbling and cauliflower is tender
Serve and enjoy!
